Purple Freeze

Whenever the temperatures start to rise and I lose my appetite during the day because it's simply too hot, this is the icy drink I always come back to. It's refreshing, nourishing, incredibly easy to make, and the best part is that most of the ingredients keep for a long time – so you don't have to buy them just for one recipe.

RECIPE

Special Equipment- Blender

A hand blender works just as well, but it may take a bit longer to achieve a smooth consistency.

Ingredients (Serves around 4 people)

  • 150 g frozen blueberries

    (store bought)

  • 300 g frozen bananas, cut into large chunks

(don't slice them too thin – they'll freeze together into one big block that's very difficult to blend. About 3–4 chunks per banana is perfect.)

  • 30 g chia seeds

  • 500 ml coconut milk for a thicker, açaí bowl–style consistency, or

  • 610 ml coconut milk if you prefer it as a smoothie.

(I always use the Alpro Barista Coconut because it's my favourite, and I feel like it makes the smoothie/bowl extra smooth.)

  • Pinch of salt

HOW TO

  • Freeze your bananas the night before. (Frozen blueberries are available in most supermarkets, so you can simply buy those.) Add all of the ingredients to a blender and blend for about 3 minutes, or until completely smooth and creamy.

  • If you'd like to turn it into a bowl, simply top it with your favourite granola, fresh fruit, coconut flakes, or anything else you love. Enjoy it just like an açaí bowl!

  • If you're making the smoothie version, place your glasses in the freezer for 1 hour beforehand. Pour the finished smoothie into the ice-cold glasses to keep it chilled and fresh for longer.

ENJOY the summer days, and I hope this recipe brings you a little refreshment whenever you need it!
