Basil Kissed Strawberries
Whether you’re hosting an easy dinner in the garden or heading to an elegant dinner party, this dessert always works!
RECIPE
Special Equipment- Mortar and pestle
Ingredients (Serves 4 people)
1 Bunch fresh basil (preferably red basil sold in a pot, as the flowers can be used for garnish)
1 Pack of strawberries
3 Tablespoon caster sugar
1 Packet of vanilla sugar (approx. 8g)
250ml creme double (double dream)
HOW TO
Wash and hull the strawberries, then cut them into your desired size. For a simple presentation, halving them is usually sufficient. For a more refined look, cut them into smaller pieces. Divide the strawberries between your chosen serving bowls or dessert plates.
Place 2 tablespoons of caster sugar, the vanilla sugar, and the basil leaves (leaves only, no stems) into a mortar and pestle. Crush and grind until the basil and sugar are combined into a coarse, fragrant mixture. (You may need to scrape the mixture down from the sides of the mortar a few times before continuing to grind again) Add the remaining tablespoon of caster sugar and briefly mix everything together with a spoon. Set aside until ready to use.
Open the double cream and spoon it directly over the strawberries without whipping or otherwise altering it.
Sprinkle the basil sugar generously over the strawberries and cream. If available, garnish with the flowers from your basil plant.
Your dessert ist ready to serve!
