Very Easy Pancakes

For us at Batter, pancakes are a little slice of heaven here on earth — whether for kids or adults, they just make you feel good! This recipe is super easy, no need to whisk egg whites — we like to keep things simple and just use baking powder for the fluffiness ;)



RECIPE

Special Equipment- Stand mixer or a hand mixer

For best results, use a stand mixer like a KitchenAid or a hand mixer — a whisk works too, of course, just make sure to mix everything really well!

Ingredients (Makes about 7 Pancakes)

  • 275g White Flour

  • 1 Packet Baking Powder

  • 1 Packet Vanilla Sugar

  • A Pinch Of Salt

  • 2 Eggs

  • 205g/ml Milk of your choice – I like to use rice-coconut milk, but any kind will work just fine.


HOW TO

  • Preheat your oven to 70°C (160°F) with top and bottom heat to keep your finished pancakes warm.


  • Add all ingredients to a large mixing bowl and whisk well until the batter is completely smooth and no lumps remain.


  • Prepare a non-stick pan with a little neutral vegetable oil (rapeseed/canola oil works best as it won’t affect the flavor).


  • Heat the pan on high heat. Once hot, use a ladle to pour in the first pancake. Then immediately reduce the heat to medium—or even lower if needed.
    (Tip: If your pancakes turn dark brown instead of golden, turn the heat down a notch.)


  • Cook each pancake for about 50 seconds on each side, until golden and fluffy.


  • Transfer your finished pancakes to the warm oven until ready to serve.


Serve your pancakes with maple syrup, butter, compote, jam—whatever you're in the mood for! Just go with what you’re craving.
