Apple Caramel Dream
We love desserts where warm and cold come together — and this one is exactly that. It’s a simple, wintery, and perfectly festive Christmas treat that you can prepare a day in advance, so you can enjoy a stress-free Christmas Eve and spend more time with your loved ones instead of in the kitchen.
RECIPE
Special Equipment- vegetable peeler and ice cream scoop
Don’t be afraid of preparing the caramel sauce — just make sure no children are nearby, and never dip your finger into the pot to taste it. Caramel gets incredibly hot!
Ingredients (Serves 5-7 people)
4 Apples
200g Cane Sugar (Brown Sugar)
60 Butter
1dl Heavy cream (vollrahm)
1/2 Lemon
120g Caster Sugar (White Sugar)
1 Vanilla Bean
500ml Vanilla Ice Cream
1 Tub Crème Double
Cinnamon
HOW TO
For the Apples
Peel your apples and cut them into small pieces.
Add the apple pieces to a medium-sized saucepan.
Add the 200 g of raw sugar.
Slice your vanilla bean lengthwise, scrape out the seeds, and add both the seeds and the split vanilla pod to the apples and sugar in the saucepan.Squeeze the juice of half a lemon over everything.
Set the stove to high heat.
Once everything comes to a boil, reduce the heat to medium and let it cook for about 15 minutes, until the apples are soft.Place a bowl in the sink and set a colander inside the bowl.
Pour the entire contents of the pot into the colander. Transfer the apples into a bowl just temporarily and discard the vanilla pod. Keep the juice collected from straining the apples and set it aside as well.
For the caramel sauce
Take a medium-sized pot and add the 120 g of white sugar along with 4 tablespoons of water.
Place the sugar and water in a medium-sized pot
Heat over medium heat until the sugar starts to melt Once a crust or crystalline layer forms begin stirring gently
Continue to simmer stirring occasionally until the sugar is fully melted and turns golden brown about 15 minutesTip!
Be careful not to burn the sugar reduce the heat if necessary. Caramelized sugar is extremely hot so handle with caution
Remove the pan from the heat add 60 g butter and a pinch of salt and stir everything quickly into the caramel place the pan back on the heat and let everything simmer over medium heat for 2 minutes stirring occasionally
Slowly stir in 1dl heavy cream and let everything simmer for about 5 minutes stirring occasionally
Remove your caramel sauce from the heat and add it to your apple liquid. Whisk everything thoroughly and then add the apples. Mix them thoroughly into your caramel sauce as well.
Take a small bowl and add one scoop of vanilla ice cream to each. Add the apples with sauce over the ice cream. Top with a teaspoon of crème double and sprinkle a little cinnamon on top. Your dessert is now ready to serve!
If you prepared the apple caramel sauce for the next day, pour everything into a Tupperware and store it in the refrigerator. (max. 2 days) Simply warm everything quickly in a pan before serving.
ENJOY
We topped it with vanilla powder, but a sprinkle of cinnamon brings out the flavor even better.
